If the landowner is symbolically Christ, what is the meaning of Christ harvesting where he did not sow and gathering where he did not scatter? Is there a deeper interpretation of this particular verse?
The landowner is not literally Christ. The parable is about God’s expectations and the wise use of what has been entrusted to us. The landowner is not meant to be a literal stand-in for God. Jesus was using the expectations of this world to help us understand the expectations that God has for us. The idea of a landowner who harvests where he did not plant and gathers where he did not scatter is simply meant to convey the notion of a landowner of great power.
